Hydroxypropylmethylcellulose ist der Propylenglykolether der Methylcellulose, bei dem die Hydroxypropyl- und die Methylgruppe über Etherbindungen an den wasserfreien Glucosering der Cellulose gebunden sind. Es handelt sich um ein weißes bis cremefarbenes Cellulosepulver oder -granulat mit ähnlichen Eigenschaften wie Methylcellulose: Es ist in kaltem Wasser löslich, aber in heißem Wasser unlöslich. Die Löslichkeit in organischen Lösungsmitteln ist besser als in Wasser; Hydroxypropylmethylcellulose ist sowohl in wasserfreiem Methanol und Ethanol als auch in organischen Lösungsmitteln wie chlorierten Kohlenwasserstoffen und Ketonen löslich.
